Maple Sweet Potato Loaf

Ingredients

1 can of sweet potato puree (1.75 cups)
2 eggs
1//2 cup of your favorite Corey's Sugar Shack NYS Pure Maple Syrup
1/2 cup of milk or dairy free milk
1/4 cup of Corey's Sugar Shack Maple Sugar
1 tsp of vanilla extract
2 cups of flour
2 tsp of cinnamon
1/2 tsp of nutmeg
1 tsp of baking powder
1 tsp of baking soda
1/2 cup of sunflower seeds, pumpkin seeds, or walnuts (for topping)
Directions
Preheat oven to 350 degrees and grease or line a 5"x9" loaf pan.
Mix together all wet ingredients in large bowl.
Mix together dry ingredients in separate bowl and add to wet ingredients.
Combine until you've created a smooth batter.
Empty batter into loaf pan and sprinkle on your preferred topping.
Bake for 1 hour or until a knife inserted into the center comes out clean.
