Maple Sweet Potato Loaf

Ingredients

Loaf of sweet potato bread made with Coreys pure maple syrup and maple sugar in pan sitting on wood platform

  • 1 can of sweet potato puree (1.75 cups)

  • 2 eggs

  • 1//2 cup of your favorite Corey's Sugar Shack NYS Pure Maple Syrup

  • 1/2 cup of milk or dairy free milk

  • 1/4 cup of Corey's Sugar Shack Maple Sugar

  • 1 tsp of vanilla extract

  • 2 cups of flour

  • 2 tsp of cinnamon

  • 1/2 tsp of nutmeg

  • 1 tsp of baking powder

  • 1 tsp of baking soda

  • 1/2 cup of sunflower seeds, pumpkin seeds, or walnuts (for topping)


Directions

  1. Preheat oven to 350 degrees and grease or line a 5"x9" loaf pan.

  2. Mix together all wet ingredients in large bowl. 

  3. Mix together dry ingredients in separate bowl and add to wet ingredients.

  4. Combine until you've created a smooth batter. 

  5. Empty batter into loaf pan and sprinkle on your preferred topping. 

  6. Bake for 1 hour or until a knife inserted into the center comes out clean. 

  7. Enjoy!
