When crispy bacon, melty cheese, and juicy chicken meet Corey’s Maple BBQ Sauce, something magical happens in your skillet. This Monterey Chicken is cozy, quick, and packed with flavor—perfect for weeknight dinners, casual entertaining, or game-day spreads. It’s the kind of recipe that feels indulgent but comes together without fuss (which we love).
And bonus: this dish is secretly a Super Bowl MVP in disguise—just slice it into bite-size pieces, add toothpicks, and you’ve got a crowd-pleasing appetizer that disappears fast.
Skillet Monterey Chicken
Ingredients
4 boneless, skinless chicken breasts
8 slices bacon
½ cup chicken stock
4 tablespoons Corey’s Maple BBQ Sauce
4-6 oz Colby Jack cheese, shredded
1 diced tomato
Salt & pepper
Simple Skillet Steps
Cook the bacon in a large skillet until crispy. Remove and set aside.
Prep the chicken by pounding to an even thickness and seasoning lightly if desired.
Brown the chicken in the same skillet (about 2–3 minutes per side).
Add chicken stock, cover, and cook until chicken is fully done (about 4–5 minutes).
Turn off heat and brush each piece with Corey’s Maple BBQ Sauce.
Top with bacon and cheese, then lightly broil for 60 seconds until melty and bubbly.
Finish with tomato and serve immediately.
That’s it—simple, cozy, and wildly satisfying.
🏈 Super Bowl Party Hack
Turn this into a game-day appetizer by slicing the finished chicken into bite-size pieces, adding toothpicks, and serving on a platter. Sweet maple BBQ + bacon + cheese = instant crowd favorite.
